If you have high value vehicles then you might want to think about having the employee get their own personal policy on the vehicle also and make them pay for it, if they are self employed.

This way, when they are not in the scope of employment the personal policy will cover damages and injuries if an accident occurs. You also might think about not allowing your employees take the company vehicles home after hours and on the weekends. The employees should not rely on the company for their mode of transportation anyhow.
